How to make it

  1. Wash the whole eggplants clean and pat them dry. Brush a layer of oil on the surface. Place in an oven preheated to 180°C and bake for 20 minutes.

  2. Remove the eggplants and slice them open lengthwise down the middle. Brush them with the Garlic Soy Sauce. Put into the oven again at 180°C and bake for another 5-10 minutes. Remove from the oven, brush with any remaining garlic oil, sprinkle with the chopped scallions and diced red pepper, and serve.
