How to make it
Brush to clean the potatoes and boil in water for about 10-15 minutes until cooked.
Sauté bacon & onion, add Char Siu Sauce and heat though.
Half the cooled potatoes, scop out the flesh.
Cut each half into 4 pieces to obtain 16 potato skins in total.
Brush the outer skin with some olive oil. Arrange potato skin in baking tray and top with Char Siu Sauce mixture, sprinkle with cheese.
Bake in a preheated 220°C oven for 10 minutes. Serve with sour cream.
