Korean Spicy Stir-Fried Pork Belly

How to make it

  1. Slice the pork belly and set aside, slice the garlic and onion and cut the bell peppers into rings. Set aside.
  2. Mix all seasoning sauce in a bowl and set aside.
  3. In a dry pan (no oil), pan-fry the pork belly slices until browned and some fat is rendered. Cook until about 70% done, then remove from the pan.
  4. In the same pan, sauté the onion, garlic, and kimchi until fragrant. Return the pork belly to the pan.
  5. Pour in the seasoning sauce, reduce to low heat, and simmer for 10–15 minutes until the flavours are absorbed and the sauce reduces.
  6. Sprinkle with green and red bell pepper rings and shredded cheese. Serve with fresh lettuce leaves for wrapping.
