How to make it
Sauté onions, bacon and potatoes until cooked through. Add diced smoked turkey, bell pepper and seasoning mix. Stir well to make the filling. Let cool and set aside.
Place a layer of cling film on a worktop surface. Lay the smoked turkey slices flat to form a rectangle. Place a layer of cooked spinach. Spread a layer of filling over the top, then roll up the sliced turkey to form a log. Set aside in the freezer.
Brush melted butter over filo pastry for 4–5 layers. Place the frozen filling onto the filo pastry, and roll it up inside. Seal the edges with beaten egg, and brush some beaten egg over the top of the pastry.
Bake pastry roll for 15–20 minutes in a 150°C preheated oven until golden-brown.
