How to make it

  1. Cook eggplant in hot oil or boiling for a minute.
  2. Marinate beef rib pieces with marinade for 10 minutes. Pan fry beef ribs both side until golden, add egg plant, red curry and 50 mL water.
  3. Cook over medium heat for 3 minutes or until cooked through.
